Cold Soba Noodles Recipe – What we Eat

There’s this nice little food court at one of the Asian Supermarkets in our area that serve Korean, Japanese, and other types of Asian food. Charlie and I like to go there after work sometimes to have dinner before we do some grocery shopping. There’s one stall in the food court that serves curry plates that come with a noodle on the side. You can pick between an udon soup or a cold soba noodle and Charlie and I always pick the soba.
But first, what is soba? I’m not an expert by any means but from what I gather soba is the Japanese name for buckwheat. Is it healthier than other noodles? I guess that is up for discussion but I know that it is gluten-free and has a higher fiber and protein content than what we define as “traditional” pasta.
Soba can be used in a variety of ways just like any other pasta. It can be served hot or cold, pan fried or in soup, So here we go, cold soba noodles. 😃

Ingredients
  • Soba noodles
  • Sesame Oil, 1 tsp
  • Daikon radish, 1 tbs grated
  • Wasabi paste, 1 tsp
  • Tsuyu soup base
  • Furikake, optional
  • Masago (Smelt Egg), optional
Couple things before you begin:
  • Soba noodles come dehydrated just like regular paste or fresh. Just follow the directions on the pack to figure out how long to cook. img_0082.jpg
  • Tsuyu soup can be found at most Asian super markets. I buy the ones that are concentrated where you add water. I’m sure I can make this from scratch but I still need to learn how to do so. (I hear a future post coming on). I would personally add 3/4 cup water to 1/4 cup soup base. Yes, it’s that salty. But to each their own! You can always add a little more if you feel it’s too bland. img_0028.jpg
Directions
  1. Bring a pot of water to a boil. Cut soba noodles in half and cook until cooked to desired texture (I like a little al dente), approximately 5 mins. Strain thoroughly.
  2. In strainer, run noodles under cold water and then toss noodles in sesame oil so they don’t stick together. Place in a small bowl
  3. In a separate bowl mix wasabi, daikon, tsuyu soup until wasabi is thoroughly mixed into broth.
  4. Garnish with furikake and masago. (Optional)
  5. Dip noodles into your cold soup and enjoy!

Crab Deviled Egg Recipe – Stuff we Eat

To be honest, I don’t know what it is about Deviled Eggs that I love so much. Charlie always rolls his eyes when we go out to eat and he sees Deviled Eggs on the menu because he knows what’ll happen next. I’m going to ask him if I can order them. And he always says no. Why? Because he knows I can easily make them at home but I’m just too lazy 😛
I’m always looking for ways to take something to the next level so I started thinking of how I can make Deviled Eggs more fun. Bacon? To obvious. Ranch? Meh. And then it hit me! Crab! It’s the perfect ingredient, subtle in flavor, will add a slight sweetness, and the texture is great for something like this.
Then I thought, what’s the one thing I don’t like about Deviled Eggs? They run out too fast. You can just pop one into your mouth and then next thing you know you ate a dozen hard boiled eggs lol! So I decided to make this into an egg salad to help it last longer. It’s perfect on top of a piece of toast or a cracker.
1 can lump crab meat
1/2 stalk celery, minced
1 green onion, sliced
2 tsp relish
3 tbs sour cream
3 tbs plain greek yogurt
12 large eggs
1/2 lemon, juiced
1 teaspoon mustard
1/4 tsp vinegar
Salt and pepper, to taste
Paprika, for garnish
Old bay, for garnish
Hard Boiled Eggs
  1. Place eggs into a pot with cold water about 1 inch above eggs and let water come to a boil.
  2. Turn off heat. Set aside for 12 minutes (if you are using XL eggs let sit a little bit longer).
  3. Place eggs in ice bath and peel.
Deviled Egg Salad
  1. Strain crab meat thoroughly (so that your egg salad isn’t watery).
  2. Cut peeled eggs in half and scoop out egg yolks.
  3. Mix sour cream, greek yogurt, lemon juice, mustard, and vinegar into a bowl until smooth.
  4. Add celery, 3/4 of your greet onion, relish, salt, and pepper to egg yolk mixture.
  5. Dice egg whites roughly and fold into egg yolk mixture.
  6. Add crab meat and gently fold into mixture. Note: You can go with the regular can of crab meat if you’re ballin on a budget. But trust yo’ girl on this one, the premium lump crab meat is better. Spend the extra $3 or $4 bucks and get the good stuff. If you want to be a rock star buy a crab, steam it, and pull the meat yourself 😃
  7. Garnish with paprika, Old Bay seasoning, and the rest of your green onion for color and added flavor.

Kissa’s TV Guide: The Comeback of Fall TV – Stuff we Like

Guys! This is my favorite time of year. The weather is starting to get cooler, there’s a cool breeze in the air, the end of year holidays are just around the corner, and fall TV is making it’s way back into our prime time lives! Yaaaasss!

As you guys know, I’m quite the TV binger. I love a good TV series – drama, comedy, action..just no thrillers. 😛 I also love me a good Netflix or Hulu exclusive series, but that’s for another day. 🙂 So for those of you out there wondering, here are the shows I’m really excited for this season with their premier dates (in alphabetical order)…

  1. Arrow – October 5: I personally am just emotionally invested already in this show. It hasn’t been great, but it hasn’t been bad. The beginning seasons were much better. But with the crossovers they do with The Flash and just having watched it from the beginning I can’t help but keep it on the top of my list.
  2. Bob’s Burgers – September 25: This is another one of my favorites. Charlie and I always tease that this show may or may not be the story of our soon to be lives lol!
  3. Bones – Midseason Premier Date TBD: Oh Bones. Bones, Bones, Bones. I so enjoyed watching this show. It’s funny, full of suspense, a little bit of forensics, a little bit of serial killers, and a lot of personality. This season is their last and while season 11 was mediocre at best the season finale made me SO excited for season 12!!
  4. Brooklyn Nine-Nine – September 20: Man, this show is so funny. It was my favorite show from last season. That’s all I need to say. Just watch it.
  5. The Flash – October 4: I love this show! It’s a little confusing right now because of…wait…I won’t spoil it for you. But it’s a little confusing. But it’s good!
  6. Gotham – September 19: I didn’t think I would like Gotham. TBH, I thought it would be weird that the story didn’t revolve around Bruce Wayne. But turns out he’s my least favorite character on the show lol. This is a good one, very dark and exciting.
  7. Superstore – September 22: This show is pretty good! Very relatable, versatile cast, and really funny. I’m excited where season 2 will go for them.

And if you’re even more curious, here’s my list of Silver Medal shows:

  1. The 100 – Midseason premier TBD: I have to be honest, I really liked this show and it got annoying for me at the beginning of last season so I stopped watching. I heard from friends it got better as time went along so I guess I’ll give it another try.
  2. The Big Bang Theory – September 19: It’s a classic case of the “it used to be really funny and now it’s just ok.” I’m emotionally attached so I’ll watch.
  3. DC’s Legends of Tomorrow: October 13: This show is a struggle for me. I really want to like it but it hasn’t done much for me. I became attached to some of the characters because of their stints on The Arrow and The Flash, and I saw more character relate-ability as their character development progressed on the show. But it hasn’t pulled me in yet. Trying to give it one more season before it’s off my list.
  4. New Girl – September 20: This used to be one of my top shows to watch. It’s the classic silver medal story. Started off really good, not it’s ok but I’m emotionally invested in their story.
  5. Once Upon a Time – September 25: The only reason this is in my silver medal category is because it’s kind of a roller coaster season to season. It’s good, then it’s bleh, then it’s good, then it’s bleh. Last season – pretty good!
