It’s a Scary Time to be Alive

The cruelty of this world is a very scary thing.

The  events of the past  week have been heartbreaking to say the least. Watching events unfold on video, seeing photos, reading, and hearing people’s experiences puts me beside myself. I am beside myself to see the cruelty that people can unleash on other people. As a Christian woman I just pray for more love and peace in this world. I pray for those that have been hurt and those we have lost. I pray for the souls of those that are committing these crimes. May God do work in their hearts to help them see the evil they are unleashing on this world. May they see the sinfulness in their ways, repent for forgiveness, and change.

There is hate in this world, there is evil in this world.
There is sickness, there is pain, and there is death.

It’s a scary time to be alive. There is pain and suffering being imposed on the world, people are killing innocent people, our Earth is in danger, there is sickness that cannot be healed..I don’t mean to be a debbie downer but I’m scared. I’m scared of the future of our world. I’m scared for the future of humanity. Shootings, murders, and bombings of innocent people are more and more common on the news. There are wars upon wars that are being fought. You see the word “cancer” more and more often. You see people sick, in pain, and struggling to stay alive.

It breaks my heart.

But what can I do? I can pray, pray for our world. I can show others love and compassion, even though I don’t receive it back. I can have grace even in times that I want to succumb to evil. It’s not much and sometimes I’m disappointed by that. But if we all give a little, it becomes a lot. Every bit that I can give I will, that’s the only way we will start to see change.

Lord, please bless our world.

My Holiday Playlist

I know some crazy people feel like it’s too soon, but for me it can’t come soon enough! The holidays are HERE!!!! 🙂

My Spotify and Pandora playlists have been pretty much all holiday music. As we get closer and closer to Christmas I’ll be sharing some great Christmas music with you guys! EEEE! I’m giddy with Christmas spirit!!

I’m currently listening to Dave Barnes, he has 2 amazing Christmas albums but he has amazing non-holiday music as well!

Low Carb Sausage and Vegetable Casserole

It’s been almost over a month since I’ve started my low-carb journey. It’s been quite a roller coaster of succeeding and failing, you know the usual. But Pinterest has been one of my top resources for low-carb recipes. If you’ve read my recent post you’ll see I’m pinning up a storm of low carb recipes I want to try. I’m a woman of variety, I’m not a fan of eating the same thing for more than 2 days. Can you blame me? 😛

This recipe was a great one because it’s relatively low in cost and super easy to make! It’s also very easy to change up ingredients to give yourself some variety too.

What you’ll need:

1 lb sausage of your choice, diced into small cubes
1.5 cups broccoli
2 tbs of garlic, minced
2 tbs of green onion, diced
8 oz of crimini mushrooms, sliced
2 cups spinach
1 pack of cream cheese
1 cup of half and half
1 tsp paprika
1 cup mozzarella cheese

Preheat your oven to 350 F. Makes about 6 servings.
Step 1: Sautee your sausage and brocolli with a little bit of olive oil until brown. Transfer to a baking dish.
Step 2: Sautee your garlic and onion until the onion is lightly sweaty then add mushrooms.
Step 3: Add cream cheese, paprika, and half and half to your mushroom sauce. Stir until thoroughly mixed and melted.
Step 4: Add spinach to your baking dish and pour mushroom sauce on top. Sprinkle mozzarella cheese and bake for 25 minutes or until mozzarella is melted and golden brown on top.
Optional: Garnish with chives or green onion to finish.

This is one of my favorite casseroles for a low carb diet check out the carb content (found on myfitnesspal):
1 lb sausage: 18g
1.5 c broccoli: 8g – 5g fiber = 3g net carbs
2 tbs garlic: 6g
2 tbs green onion: 1g
8oz crimini mushrooms: 10g – 1g fiber = 9g net carbs
2 c spinach: 2g – 2g fiber = 0g net carbs
cream cheese: 8g
1 c half and half: 10g
1 tsp paprika: 1g – 1g fiber = 0g net carbs
1 c mozzarella: 4gTotal: 68g – 9g fiber = 59g net carbs/6 servings = 9.83 net carbs per serving
