4 Step Pesto Meatball Recipe

This is one of my favorite dishes right now! Mainly because you can buy these ingredients pre-made if you’re don’t have a lot of time/on the go but you can also make the ingredients from scratch so that it fits your dietary needs better. It’s super easy with just 4 steps and 4 ingredients!


Ingredients (makes 2 servings):

  • 1 cup pesto
  • 16 oz. cooked egg noodles (or your favorite pasta)
  • 10 1 oz. meatballs – I used half chicken half beef meatballs and it was yummy!
  • 2 oz shredded mozzarella cheese

Note: Because life has been so busy lately I bought all these items pre-made and it only took me 15 mins in total to make. I encourage you to make the pesto and meatballs if you have the time that way you can control what is put into your food which is never a bad thing. 

Directions:

  1. In a medium pot bring water to a boil, add a pinch of salt. Add noodles and let cook until desired texture (I like my noodles slightly al dente so 7 mins on medium heat is perfect for me). Strain immediately.
  2. In a saucepan sear your meatballs until golden brown on at least 2 sides.
  3. Add pesto and cooked noodles.
  4. Top with mozzarella cheese.

Mom’s Chicken Salad – What we Eat

My mom was an excellent cook. Anything she felt like cooking always came out delicious. When Ninong’s first opened one of the recipes that my mom made her own was chicken salad. I guess I took it for granted because I started craving it one day. I knew I didn’t want to make her exact recipe because her recipe had a lot more mayonnaise so I decided to make a version of my own. 🙂


Ingredients:

  • 2 Chicken breasts, boiled and cooled
  • Red onion, diced small – 1/2 cup
  • Celery, diced small – 1/3 cup
  • Sweet relish – 4 tbs
  • Plain greek yogurt – 1 cup
  • Mayonnaise – 2 tbs
  • Turbinado sugar – 1 tbs
  • Salt and pepper – to taste

Directions:

  1. Shred chicken by hand or by using a stand mixer with a paddle attachment.
  2. Squeeze liquid out of relish and add to chicken.
  3. All onion, celery, yogurt, mayonnaise and sugar. Mix thoroughly.
  4. Add salt and pepper.
  5. Let chill in refrigerator for at least 1 hour.

Garlic Baked Brie Recipe – Stuff We Eat

Did I ever tell you I love cheese? Well, I do 😀

This baked brie recipe is one of my favorite things to prepare when I want to pretend I’m fancy, lol! This is the recipe in its simplest form and it’s frickin bomb! You can add some fresh fruit or preserves like apricots, figs, or raspberries to add a sweet element. Or some Crannies would be good too! You can also add some candied nuts like pecans, walnuts, or almonds for a crunch element. But like I said, let’s stick with the basics cuz the recipe is just as good without all the fluff! Noms.

Ingredients:

  • Brie (your favorite brand)
  • Garlic peeled, 3-6 oz. depending on the size of your brie or how much you like garlic 🙂
  • Olive oil, about 3-4 oz.
  • Whole wheat french bread, sliced on a bias

Instructions:

  1. Preheat oven to 300 degrees.
  2. Place your brie in the middle of a cast iron skillet or baking pan.
  3. Around the perimeter of the brie place your peeled cloves of garlic and pour in your olive oil.
  4. Bake for 30 mins or until garlic is a golden brown and the brie puffs up a little bit.
  5. Remove from oven. Set aside
  6. Bake french bread for 5-10 mins (until desired color).
  7. Enjoy!
