Crab Deviled Egg Recipe – Stuff we Eat

To be honest, I don’t know what it is about Deviled Eggs that I love so much. Charlie always rolls his eyes when we go out to eat and he sees Deviled Eggs on the menu because he knows what’ll happen next. I’m going to ask him if I can order them. And he always says no. Why? Because he knows I can easily make them at home but I’m just too lazy 😛
I’m always looking for ways to take something to the next level so I started thinking of how I can make Deviled Eggs more fun. Bacon? To obvious. Ranch? Meh. And then it hit me! Crab! It’s the perfect ingredient, subtle in flavor, will add a slight sweetness, and the texture is great for something like this.
Then I thought, what’s the one thing I don’t like about Deviled Eggs? They run out too fast. You can just pop one into your mouth and then next thing you know you ate a dozen hard boiled eggs lol! So I decided to make this into an egg salad to help it last longer. It’s perfect on top of a piece of toast or a cracker.
1 can lump crab meat
1/2 stalk celery, minced
1 green onion, sliced
2 tsp relish
3 tbs sour cream
3 tbs plain greek yogurt
12 large eggs
1/2 lemon, juiced
1 teaspoon mustard
1/4 tsp vinegar
Salt and pepper, to taste
Paprika, for garnish
Old bay, for garnish
Hard Boiled Eggs
  1. Place eggs into a pot with cold water about 1 inch above eggs and let water come to a boil.
  2. Turn off heat. Set aside for 12 minutes (if you are using XL eggs let sit a little bit longer).
  3. Place eggs in ice bath and peel.
Deviled Egg Salad
  1. Strain crab meat thoroughly (so that your egg salad isn’t watery).
  2. Cut peeled eggs in half and scoop out egg yolks.
  3. Mix sour cream, greek yogurt, lemon juice, mustard, and vinegar into a bowl until smooth.
  4. Add celery, 3/4 of your greet onion, relish, salt, and pepper to egg yolk mixture.
  5. Dice egg whites roughly and fold into egg yolk mixture.
  6. Add crab meat and gently fold into mixture. Note: You can go with the regular can of crab meat if you’re ballin on a budget. But trust yo’ girl on this one, the premium lump crab meat is better. Spend the extra $3 or $4 bucks and get the good stuff. If you want to be a rock star buy a crab, steam it, and pull the meat yourself 😃
  7. Garnish with paprika, Old Bay seasoning, and the rest of your green onion for color and added flavor.

Octopus Ceviche Recipe – Stuff We Eat

Oh man! Guys this is everything I wanted and more, SO yummy!

I love ceviche. Yes, love. Fish, shrimp, crab, mixed…I love ’em all. There was a special for the chopped and cooked octopus so I made my own from scratch so I know exactly what I was putting in it.

You’ll need:

  • Seafood – your personal favorite (Diced)
  • Tomato – I like roma (Diced)
  • Red Onion (Diced)
  • Lime Juice
  • Jalapeno or Serrano peppers – depending on how spicy you want it (Minced)
  • Cilantro (chopped)
  • Crushed sea salt – to taste

I didn’t put quantities up there because I think it’s great to create the right ratio that works for you. But in case you want to know, here’s what I did..

  • 1.5 pounds of octopus
  • 6 medium roma tomatoes
  • 0.5 medium red onion
  • Juice of 1 lime
  • 3 Jalapeños
  • 0.5 a bunch of cilantro
  • 2 tsp sea salt

Combine all the ingredients into a large bowl and let chill for at least an hour. I got a great suggestion from a coworker to blend the peppers and lime juice before mixing that way the spice is evenly distributed. Will definitely have to try it next time! This would have been enough to serve a small dinner party. Voila!

Homemade Acai Bowl Recipe

Good morning! Our local farmers market started a couple weeks ago so I’ve been stocking up on my local fruits and vegetables lately and love it. If you’re able go support your local farmer! The produce is usually organic, the cost is competitive, and your produce will last twice or 3 times as long as what you would buy in store.

My favorite fruit, strawberries, are in season here in California so I’ve been buying a basket every week. 😊 I’ve been trying different ways to prepare them – smoothies, au natural, and in acai bowls!

Here’s our easy and quick recipe for our acai bowls. I’ve noticed that most grocery stores now carry frozen acai. This makes making acai bowls at home so easy! I personally buy the Sambazon brand. I got mine from Sprouts. I like it because its unsweetened so I can control the sweetness. I use agave or honey to sweeten it, but I personally like agave because the honey solidifies when you put it into the cold acai.

1 pack of frozen acai (100 g pack)

4 oz juice or your choice of nut milk

1 cup fruit (I personally like strawberries, blueberries, and banana)

2 oz. granola

1 tbs agave or honey (1/2 for the acai and 1/2 for for the topping)

  1. Chop your fruit and put aside.
  2. Blend frozen acai and juice/milk and 1/2 tbs of agave.
  3. Place into a bowl, top with chopped fruit and granola.
  4. Drizzle remaining agave on top

Total prep time is 15 mins. Longest part is is chopping your fruit. Enjoy!
